OK,

This is what we know so far, you have audio input because the vu meter moves when you touch the input pins. You also have output audio.

Lets get back to your issues at hand.

After testing the input pins with the Audacity VU meter, I have found that only the front four or five input pins (as well as the output pins) give any signal, if you're looking at the Pi with the input breakout board on the right.
